Must make cookies !

Cookies …

Best made on the weekends
while listening to the
Prairie Home Companion Radio Show
in the kitchen.

Drink some coffee.  (You’ll need it)  ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~

Preheat Oven to 350 F.
In a BIG bowl, cream together :

             4-5 fresh eggs  

½ cup softened butter (NOT margarine or  oil or Crisco)

2 cups brown sugar 
1 cup white sugar
2 teaspoons vanilla
1 teaspoon almond extract
1/2 teaspoon salt
¼ cup strong coffee
¼ cup cream or sour cream if you have it

In another bowl, combine these dry ingredients:

6 cups Old Fashioned Cut Oats
4 Cups Flour  
1/2 cup wheat germ 
2 teaspoons fresh baking soda
When you have the dry ingredients stirred up, begin adding them a cup at a time to the wet creamed sugar mixture.
The mixture may be a wee bit soft or stiff ~ this is when the muscles come in handy.  With a strong wooden spoon ~ (good ones are available from the Zen Spoon Master of Hungry Holler on Etsy ), mix in gradually the chocolate chips, raisins and nuts. ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* 
The more nuts, the better ! 

2 cups semi sweet chocolate chips
1 cup raisins (optional)
(if you use raisins, soften them I some water or brandy)
1 cup ground walnuts (optional)
½ cup sliced almonds
1 cup chopped pecans    
Let this mixture rest a few minutes while you catch your breath.   Have some more coffee with milk and drink it.   Or a glass of water.

Get the baking sheets ready to go.   If you want no mess, you can use some baking paper or tin foil ~ I didn’t discover this until AFTER years of cleaning pans  ~ Ha !  ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~
Use your buttered clean hands, or big spoons, and make balls of  dough  ~ If you want big breakfast style cookies, make them about the size of a baseball and flatten them a wee bit.  Leave about an inch between cookies.    These will be great for breakfasts on the go !   If you prefer smaller, about the size of a walnut. ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~
Or, you could put all the dough in a flat  baking pan and bake ~ Then cut into squares ~ at this point ~ YOU decide what you want ~ YOU  are the cook!    ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ 

Bake until golden brown,  remove from pan, cool, then place in zip locks in the freezer for future need, and some in a large Tupperware for current needs !  ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~

Enjoy with milk and coffee.   Cookies ARE good food !
