Mom is Fueled by Oats Raisins and Gunnar's Honey !

Mom's Oat Balls Recipe

Make these early in the morning
so the house smells good .
You will need:
One large bowl
1 large spoon
Baking sheets or large muffin tins
Gunnar's Honey
Pumpkin Pie Spice
2 Eggs
Veggie Oil
Turbinado Sugar
Ground Cloves
Oven 450
1 large can Old Fashioned Oats
2 tablespoons Cain's Pumpkin Pie Spice
1 large bag raisins ~
(plump the raisins in water in microwave)
2 eggs
When raisins are cool enough, add the 2 eggs
and 1 tablespoon salt
and stir up
in the bottom of the large bowl.
This is the binder.
Then add
1 Christmas Gunnar's Honey 12 ~ 16 oz  ~ the BEST !
(heat to liquid in microwave)
Warm honey and plump the raisins separately.
Put hot honey and raisin mixture in large bowl
and stir up with eggs.
Add oats, then Pumpkin Pie Spice
Stir till all the oats are coated
This will be a pretty dense mixture !
Grease flat pans or muffin cups with vegetable oil.
With veggie oil hands, roll balls of oat mixture,
about 1.5 to 2 inches round.
Patty cake roll and put them in the pan.
Bake until just golden brown ~
About 25 minutes ~
You can roll them around on the pan
or in the muffin cups a la Aebelskiver to make sure they
brown nicely ~ not too brown !
While they are browning, make a glaze :
Turbinado Sugar 1 cup
1 tablespoon Pumpkin Pie Spice
1 teaspoon Ground Cloves
1/3 cup water
Microwave this 10 seconds at a time, until it is bubbly,
stirring, don't let it bubble over !
When the Oat Balls are out of the oven, while still hot,
teaspoon the glaze over top of them ~ one teaspoon or so each.
When they are cool enough, you can store them in the freezer
4 at a time in zip locks ~
Good for the road, hiking, driving,
Hot for breakfast ~ lightly micro zapped !
They are good for you !
